My setup is windows 7, a linksys WAG160N wireless router/modem and a PS3. It took me ages to get this setup to be stable so thought I'd share the settings.
First share your media on the windows 7 PC. Nothing hard about that. I then updated the router firmware to the latest.
Give the PC and PS3 static IP's. Until I did this the connection kept being lost each time an IP changed. Make sure the static IP's are out of the DHCP range on the router otherwise you might get conflicts when other devices like iphones etc connect to your home network.
If the PC and PS3 are cabled to the router that should be it, however getting the wireless to work was the tricky bit. There are some other forums out there that say to disable the SSID broadcast because the PS3 will drop out. I found that to be rubbish, perhaps the Sony people have fixed it. Anyway after much trial and error these are the wireless settings that finally worked for me where the streaming is smooth and it doesn't drop out.
Occasionally if the connection does drop due to your PC going into power save or similar, do the following. Goto the router and to the setting screenshot below and swap the 'standard channel' from 13 to 9. Refresh then change it back to 13. No need to reboot anything, the PC Media center will appear on the PS3 after about 2 minutes.
